Banana And Cinnamon Muffins

Banana And Cinnamon Muffins

150g Self Raising Flour
50g Light Brown Sugar
Half a Cup of Milk
1 tsp cinnamon
1tsp mixed spice
1 tbsp vegetable oil
1 large banana (mashed)
1 large egg

Step 1
Mix all the dry ingredients together, chop up a large banana and mash it into the mix.

Step 2
Next, you will need to pour a little milk in at a time, add the vegetable oil and egg.

Step 3
Spoon the mixture into paper cases and bake on 180 degrees for 10-15 minutes.

Step 4
Leave to cool on a wire rack.

I've just made these really yummy banana muffins and developed my own recipe which worked out so so well!! They were so soft on the inside and firm on the outside!!!
I spooned some mixture to fill half a paper case, then added a tiny bit of greek yogurt, and topped the rest up with more muffin mix (this gave them their yummy gooey centre!)
We enjoyed ours warm with lots and lots of yogurt on top!!!
The rest of the batch have all been topped with runny icing to keep them moist!!
