Festive Baking : Part One








Finally, I had a chance to bake!! I've been working so much lately that I haven't had a chance to do much! Luckily today I had the day off due to a visit to see my orthodontist (and quickly popped to get some baking ingredients on the way home!!)
I really wanted to make some home made mince pies for my dad, as well as a festive fruit cake! I managed to do both! Yay!
So here is my first festive recipe...


Ingredients


200g Plain Flour
100g Butter
1 Medium Egg
Mincemeat


For the pastry:
Mix the butter and flour together with your hands to resemble breadcrumbs. Then add the egg to slowly bring the mixture together.
Cool in the fridge for 30 minutes.


On a floured surface, roll out the pastry thinly. Using a pastry cutter, cut out 12 circles. 

Then cut out your tops (I chose little stars, but you can choose a smaller circle to make closed mince pies or any other shape you fancy!)

In a greased cupcake tin, place your circles and push down. Fill with mincemeat and cover with your desired tops!

Brush the tops with beaten egg and bake in the oven on 200 degrees for roughly 10-15 minutes.



Let them cool out the oven then dust with some icing sugar!!
And there you go... Perfect and simple to make mince pies!
