This silly internet business is driving me crazy! If you're wondering why the lack of blog posts, my internet connection is to blame once again unfortunately...
I thought (while I can) I'll post a little bit of an update!

I last posted one of these at the beginning of the month... It's now nearly March, and my birthday is soon approaching. Well, it's next week in fact...

Valentines Day has been and gone. Mine was spent at the cinema watching Wreck it Ralph and making pancakes covered in syrup! That weekend, I'd bought some theatre tickets for my boyfriend as a Christmas gift, so we went off to Manchester for the night.

My knitting club (I'll definitely have to write a blog post about it) is going well. We had much less turn up last week, but I still very much enjoy it, and love seeing others share the same passion! It's lovely although surreal to be in a room, drinking tea, knitting, and seeing others do exactly the same...

As I mentioned, my birthday is next Monday. I'm having a little party to celebrate, along with a lovely meal at one of my favourite restaurants and a couple of drinks afterwards! I'm currently busy making some handmade decorations and thinking of lovely cocktails to make.
I'm also having some custom made cupcakes from Tea Time - Jane is incredibly skilled, and her sugar flowers are works of art! I can't wait to receive my cupcakes and blog all about them.

I hope you're having a very lovely week so far.
Cross fingers I'll be able to blog throughout the week / weekend!

Firstly, I'd like to apologise for being absent for quite some time. We've had internet problems at home, and I've been without it for a week.... Yes, it's really hard for someone who's constantly glued to their phone....

I was recently contacted by Ashleigh at Eat Me Cookie Company to try out her lovely range of cookie and cake mixes in a jar. As stated when she contacted me, she wanted an honest opinion about her products, and this is what I thought...

After Ashleigh contacted me, my brownie mix was delivered very quickly. The same evening, I ended up baking my brownies in excitement! I'd seen a couple of similar products before Christmas in a local market, and was keen to give one a go.

The presentation and design was lovely - just up my street! Labeling, font, colour - everything worked nicely. I loved the use of the ceramic label as well - it's something you could use over and over again, as well as the vintage looking glass jar.

The instructions were fairly easy to follow, although I'm still not used to American measurements such as 'cups' and 'fahrenheit.' I had to measure out some butter, and did a little bit of guessing work! Other than that, the instructions were simple.
All ingredients were placed in the jar, therefore it made separating rather difficult. Separating the chocolate drops from the flour, the flour from the sugar, and so on! Despite this fact, I was enjoying myself - after all, I do love baking.

It was recommended I baked the brownie mixture in the oven for approximately 45-55 minutes. After 30 minutes, the brownies still hadn't solidified enough or risen. I took them out of the oven after an hour, the top looked rather crispy, although the middle seemed a little gooey still.
A while after, the brownies slumped a little, I left them to cool down and cut them up into even squares.
The brownies tasted lovely, although I found the texture a little unusual due to their harder outside shell!

Overall, I liked the product, the packaging was lovely, but I was left a little disappointed with the result. After contacting Ashleigh, she explained the temperature and time was based on her personal preference, but we all like our brownies slightly different!
I'd definitely like to try out some more of her products though - Her cupcake jars look lovely!

Check out her Etsy shop here.

Another week has been and gone, and although I don't have much to show, I definitely feel as if I'm trying out new things and actually achieving something!
Tomorrow will be the first day of my knitting club. A lot more than I was expecting have shown an interest! I'm hoping to take my camera with me so I can share some snaps up on here.
I've been knitting a lot more lately. For some reason I'm really in the mood to knit. I love being able to create something that's unique and completely my own.
I also knitted the cabled hat above for the lovely Sophie!

As for my life in general, no updates at the moment! My birthday is coming up in a month's time, and I'm seriously panicking as I need to sort something out! I'm thinking of staying here for a night or two either before or after my birthday. Gorgeous aren't they?

I have a baking review coming up this week which I've been excited about. As well as a green smoothie challenge update!

I hope you've all had a very lovely weekend.
