Butternut Squash Soup

Hello! I'm trying to get back into this blogging business again. It's hard when evenings are extremely dark and all I have is the weekend to take some photographs. 
Anyway, once again, I feel terrible about not keeping this up regularly. I really do want to get back into it...

Anyway, recently I've been really enjoying butternut squash! I had never tried it before I got to taste some butternut squash soup at a local cafe. It was so delicious, I tried to make my own at home.
I find this recipe extremely easy and adaptable and used a bag of ready chopped butternut squash and sweet potato I saw at Tesco's! 
I boiled the veg by covering them with enough water and popped in a cube of chicken stock. Add some herbs of choice, I used some coriander and chopped up some garlic. 
Once the veg has cooked, I leave them to cool at the side of our stove (still covered in the stock mixture) Once it's cooled down a little, blend it all together. If you prefer a thicker soup, drain some of the water. 
I usually store my soup in mason jars. These can be kept in the fridge for 1-2 days. Alternatively, you can freeze the soup in jars. 

Roasting the butternut squash also makes a very delicious soup.
